Name: Roasted Salmon With Whipped Feta and Peas
Ingredients:
- 1 large lemon
- Four (6-ounce) center-cut salmon fillets (skin-on or skinless)
- 3 tablespoons plus 2 teaspoons olive oil, divided
- 1/4 teaspoon plus 1/8 teaspoon fine salt, divided
- 1/4 teaspoon freshly ground black pepper
- 4 ounces feta cheese
- 1 cup fresh peas (or defrosted frozen peas)
- 1/4 cup fresh flat-leaf parsley leaves (or dill or mint)
- 3 tablespoons plain Greek yogurt
- 1 small garlic clove
- 3 cups (3 ounces) packed watercress leaves and tender stems (or baby arugula)
Instructions:
- Position a rack in the middle of the oven and preheat to 400 degrees.
- Line a large sheet pan with parchment paper.
- Finely zest the lemon to get 1 teaspoon of zest.
- Halve the lemon, and squeeze out one of the halves to yield 1 tablespoon plus 1 teaspoon juice.
- Cut the remaining lemon half into wedges and set aside.
- Thoroughly pat the salmon dry and place it on the prepared sheet pan.
- Brush the tops of the fillets with 2 teaspoons of the oil, and sprinkle with 1/4 teaspoon each of the salt and pepper.
- Roast for 12 to 15 minutes, or until the salmon reaches your desired level of doneness.
- While the fish is roasting, in a food processor, pulse the feta, peas, parsley, yogurt, garlic, lemon zest and 1 teaspoon of the lemon juice until combined.
- With the processor running, drizzle in 2 tablespoons of the oil until the mixture is thick and creamy.
- In a medium bowl, toss the watercress with the remaining 1 tablespoon each of oil and lemon juice, and the remaining 1/8 teaspoon of salt.
- Spread about 1/4 cup of the whipped feta on each serving plate.
- Top with the salmon, then the watercress, and lemon wedges on the side, for squeezing over.

4/23/2025 - I made half a batch. I used 4 tablespoons of feta cheese, 1/2 cup
of green peas, 3 tablespoons of Fege yogurt, 1 teaspoon of garlic powder, and the
juice of 1/2 lemon for the sauce. I baked the salmon at 400 degrees for 13 minutes.
Served with Roasted Brussel sprouts and boiled baby potatoes.
